the Skinny System

I hate the word "diet".
Eastsider Diaries

The word itself implies doing something you have to do but not what you enjoy doing. I think there's a huge difference.

If you're going to "be on a diet", be on one that doesn't make your eyes hurt when you see a slice of pizza, or make you fight back the urge to pant when you see a heavenly slice of chocolate cake.

Now, I know this is easier said than done.
There are TONS of diets out there: the No-Carb (Atkins) diet, the South Beach diet, the You're-Only-Allowed-To-Eat-Soup diet, or better yet, the You-Can't-Eat-Anything (aka anorexia) diet ... you get the idea.

The only diet you should be on is a diet of moderation.

Eastsider Diaries

When I was in college, this girl in my sorority was constantly asking me about my weight. At first I was flattered, then I became annoyed. After awhile I began to realize she was generally curious because she always saw me eating.

Eastsider Diaries

But what she didn't see was how I went to the gym 3-4 times a week.
She didn't see how I was NOT getting blacked out on the weekends.
And, more importantly, she didn't see what I was eating.

Eastsider Diaries

The last point is probably the most important part.

Here are some of my tips for a happy & healthy lifestyle or "diet":

1. Motivation
You aren't going to see any results or get anywhere without a little motivation. Find something that lights that little fire under your seat that gets you going.

The new Nike commercial about Greatness really says it all.
Once you have motivation, it's easier to set goals for yourself.

2. Take Note
Now that you have some kind of goal, whatever it may be, start to be aware of your current lifestyle.
If you notice that you pair every meal with a Diet Coke, if you keep eating even though you're stuffed, or if you get exceptionally drunk a little too often than deemed normal, these are things to take note of.

3. Understand moderation
This is key.
Moderation with food is a fundamental part of my "diet".  I'm not saying I count out almonds or weigh how much rice I eat -- absolutely not.
What I mean by moderation is recognizing that a hamburger that's bigger than your face is probably not the best thing to be boasting about finishing.
When I'm hungry at 4:00pm I grab a handful of mixed nuts or have some yogurt with granola and wait patiently for dinner.

Moderation also means being in control of what you eat. Try lowering the amount of fried food and processed sugar. Instead, start eating more fiber, grains and natural sugar.

By paying close attention to the kind of food you put in your body & also being aware of how much of it you're eating, you'll start to see how much better you feel. The greener, more natural and less preservatives you ingest, the happier your body will be.

If you find yourself hungry a lot, think about why you might be hungry.
Are you hungry because you ate 5 hours ago? Or are you hungry because you're bored?
Are you hungry because you skipped breakfast? Or are you hungry because you're distressed?
This is a great chart to consult if you just don't know (complements to Rosie, the Londoner):

Most of the time hunger is a sign of dehydration.

So while you're first instinct when you're hungry is to stand in front of the pantry for five minutes, pour yourself some water and see if that doesn't do the trick. When I'm starving at 11:00pm I don't bee-line it to the fridge, I usually pour myself a glass of water instead. Late night munching is also a huge factor with moderation.
When you eat so late at night your body holds onto the sugar and carbs because it knows its going into hibernation mode. It's the same as drunk munchies, except this is much much worse because now your body has alcohol to contend with.

And speaking of alcohol, be smart.
Personally I'm a light weight. It doesn't take much to get me to a certain level, and knowing your limit is a good thing. If you know it takes you 6 beers, then why have 4 more? If a bottle of wine gets you seriously messed up, why finish it? Maybe it's because I'm out of college, but these seem like pretty basic concepts.

Finding that balance is different for everyone, but once you find a good equilibrium with nutrition, your lifestyle will adjust accordingly.

4. Move
Get off your butt, now.

Eastsider Diaries

You don't need to run a marathon to be in great shape. In fact, I hate running.

I'm definitely not saying you should be at the gym every day, but for heavens sake do something!

I like to go on walks and hikes as a way to get my heart beating faster. Especially during the summer when the sun is out longer, going on walks after dinner is a great way to get your metabolism working and also working up a little sweat. Gym memberships are expensive these days, so I use a friends account and do MyBarre3 (a.ma.zing. by the way) workouts in my living room.

Eastsider Diaries

Don't know what to do?
Take the stairs.
Ride your bike.
Walk down the street to your friends house.
Who's that calling? Don't wait for it to go to voicemail - get up and pick up the phone!

5. Don't be afraid
Food is good for you.
If it comes out of the ground ready to eat, you're okay. If you look at the ingredients list on the back of a box and see more words that you can't pronounce, chances are it's not very healthy.

I've known people who starve themselves thinking that's going to get them thin. And sure you could lose weight, but you'll be miserable, hungry, cranky and far less healthy starving yourself than if you ate moderately.

Eastsider Diaries

Mirrors are not enemy's either.
If you stare at yourself in the mirror, or step on the scale every day, you won't see what you are looking for. Instead, take a before picture. After a month of your "diet", take another. Track your progress that way, instead of scrutinizing your image in the mirror. As for the scale, just know that you won't drop those pounds over night.
It's all gradual. The more you get hung up on the numbers, the less you'll be able to focus on maintaing a healthy lifestyle.

6. Treat Yo Self
Dessert is not something to be feared either.
I love cheesecake, dark chocolate and anything with fruit on it. Just because it's sweet doesn't mean its bad for you. Your body needs sugar, just make sure you feed yourself natural sugar- none of that fakey stuff.
Eastsider Diaries

Sometimes life gets in the way and it's challenging to maintain a good balance between moderation and good-for-you-food. When I know I'm going to Portland for a weekend of irresistible cart food and drinks, I pay close attention to what I eat when I get back and end up having more smoothies that week. Likewise, if I've been scarfing down salad's every day at work, I'll make myself a heartier dinner.

Just remember to treat yourself every once in awhile.

It's all about balance.
Eastsider Diaries

Love yourself & find what works for you.
The happier you are the easier your "dieting" will be.

Pok Pok Shock

Portland has a plethora of unique and delicious places to eat. The last few times I've been down in Portland I've been dying to try food from a restaurant called Pok Pok. I heard that it is the most delectable and underrated restaurant that serves the most incredible and authentic Southeast Asian food.

Eastsider Diaries

Open until midnight every night, B and I popped in for a late night bite. We sat at the bar and, surprisingly, weren't the only hungry customers at 10:30pm on Sunday night!

Eastsider Diaries

Pok Pok & their handful of locations have been nationally spotlighted as having the best wings in the country along with an impeccable and original menu.

Eastsider Diaries

Their dishes are unique and true to their origin, Thailand. They don't serve pad thai or pad see ew or any of those generic Thai dishes -- these are so brilliant I can't even begin to describe them!

Eastsider Diaries

Their water is infused with Pandanus leaves that are straight from Northern Thailand. I was a little unsure about this at first because it makes the water taste lightly of rice... but it was actually quite compatible with the food!

Eastsider Diaries

We ordered off the late night menu and sipped on a raspberry Sum drink. Sum is a brand of drinking vinegar that is apparently quite popular in Southeast Asia. It can be used in both alcoholic and non-alcoholic drinks and has a pretty powerful flavor.

Eastsider Diaries

When our food came, I was in awe...
We had the infamous fish sauce wings

Eastsider Diaries

and the Muu Paa Kahm Waan, which is boar collar served with chilled mustard greens and a spicy chili/lime/garlic sauce and sticky rice.

Eastsider Diaries

Needless to say, it surpassed our expectations. It was by far the BEST asian food I have ever had in my life. I will definitely be going back the next time I'm in Portland.

Eastsider Diaries

This particular Pok Pok is the tiny Pok Pok Noi on Prescott in northeast Portland.
The main Pok Pok is on Division Street in southeast & the Whiskey Soda Lounge is literally down the street.

The restaurants on Division are constantly busy -- I tried going there a few weeks ago and it was a 2 hour wait for 2 people! Yeah, so, make a reservation or hit the late night Noi for a good after hours bite!

Have you been here before? What did you think?

DIY: Granola

There is nothing better than waking up in the morning, having a big cup of tea and eating a delightful bowl of greek yogurt with home made granola.

Eastsider Diaries

A friend of mine let me try a bite of her very own granola creation and I was instantly hooked! Lucky for me (and you) she shared her amazing recipe for home-made, DIY granola.

Not only is granola tasty, but it's also really good for you! This granola is made with heart healthy whole grain oats that helps lower cholesterol and are a good source of fiber. There are almonds, and flax seeds in here too which contain "good fats" & omega-3 fatty acids which are essential for a good heart and overall good health! Just remember, healthy sweets are healthy when done in moderation.

Eastsider Diaries

Here's what I used:
2 Cups of Oats
1/4 Cup ground Flax Seeds
2 Scoops of Vanilla Protein Powder
Handful of Raisins
Handful of Almonds
Cinnamon (use as desired)
3/4 Agave Nectar
1 1/2 Tbsp Honey

These ingredients are very flexible. You can use whatever nuts you want and you don't have to use protein powder either. It all depends on what you like! But one ingredient you should NOT change is the Agave nectar.

Eastsider Diaries

Agave is a used a lot these days because it's a natural sugar and can be used as a substitute for the processed, grainy stuff.

Eastsider Diaries

Let's get started!
In a large bowl combine oats, flax seeds, protein powder, raisins, almonds and cinnamon. Mix well.

Eastsider Diaries

In a smaller bowl combine Agave nectar and honey and stir together.

Add Agave nectar and honey mixture to the dry ingredients. Mix thoroughly together. Get out baking sheet(s) and cover with wax paper. Pour granola mixture on wax paper, make sure to evenly disperse them so they are cooked at the same consistency. Pop them in the oven at 300 degrees for 17-20 minutes, or until oats are cooked.

Yes, I had to censor my apron
Take out, let cool and devour!

I enjoyed my granola at work today with a little greek yogurt for a healthy and delectable snack.
Yum!

Skinny Summer Pasta

Now, I know what you're thinking: Skinny Pasta? There's no such thing.
But before you shake your head with disbelief, you have got to trust me! Skinny Pasta does exist! And better yet, it's delicious!

Eastsider Diaries

This specific recipe is Zucchini & Basil Spaghetti.
The grocery stores carry Zucchini all year round, but it's worth waiting until summer, when it's fresh and at its prime. You may be asking yourself what makes this recipe so skinny and the answer is that there is no creamy sauce or unnecessary preservatives. Hooray!

Eastsider Diaries
Eastsider Diaries

Here's what you need:
Wheat Linguine or Spaghetti
3 Large Zucchini
1 Cup Olive Oil
3-4 Cloves of Garlic
3/4 Cup Chopped Basil
1 Tbsp finely grated Lemon Zest
Salt & Pepper
Parmesan Cheese

This recipe serves about 4-5 people. I cut down my ingredients just a tad, since I was only cooking for myself. Let's get started!

1. Slice Zucchini very thin with a mandoline if you have one, or a sharp knife.

Eastsider Diaries

2. Heat oil in a 12-inch skillet over moderately high heat until hot (but not burning or smoking, that's bad). Fry Zucchini, stirring occasionally, until softened and turning a pale golden color. Transfer Zucchini from pan to baking sheet lined with paper towels to train and cover with foil to keep warm.

Eastsider Diaries

3. Add garlic to remaining oil. Stir and cook for about 30 seconds then remove skillet from heat.

4. Cook pasta until al dente. Reserve 1 cup of pasta cooking water. Drain pasta and transfer to a large shallow bowl.

5. Toss pasta with garlic oil, Zucchini, basil, zest, salt and pepper. Add reserved cooking water to moisten if necessary. Dash a bit of parmesan cheese on top and serve!

Point Casino Photo Shoot: Day 1 & 2

Recently I've been doing a little modeling for fun but mostly because I have time to do it! It's been great so far and this week I was asked to do a photo shoot for a casino re-branding. I hopped on the ferry from Seattle and headed west to Bremerton.

Call time was 9:30pm. The models got situated in the back room, got our outfits finalized and waited around while everyone got their hair and makeup done.

Then the real work began! We popped in and out of the casino for the rest of the night, each time in a different outfit and working in a different part of the casino. I'm sure the local gamblers were getting annoyed with the constant flashes of bright lights used on our set. Well, hopefully they weren't too annoyed!

In the Boom Room
We worked until the early morning and by the time 4:30 came around and it was time to go back to the hotel, the sun was slowing rising. So we all scuttled off to bed, exhausted but too wired to sleep. Eventually I drifted off.

That afternoon I woke up around noon. Vada & I went to coffee and relaxed before another night of shooting. We headed back to the casino at 8:00pm. After the usual hair and makeup and wardrobe, it was off to the buffet for some shots with the chocolate fountain!

Killing time on set
After another quick change, it was off to the cigar lounge. This was an especially tricky scene only because the room was so small and everyone had to keep taking breaks to clear their head from the cigar smoke!

We left the casino at 4:00am and headed straight to bed.
Next morning I headed back to Seattle on the ferry. The last few nights were such a blur, I didn't even know what day it was!

Heading Home
It was a great mini-holiday away from reality, and I met some fantastic people. Hopefully the next job I do they'll be there too! Xx
